My source is the OP published financial statements. They don't contain sufficient detail to determine actual liquor cost. It is reported as beverage which can include sodas, tea, etc. Overall cost of sales (food and beverage) did not appear excessive whereas labor was over 90% of revenue during the part of the off season. Without actual staffing numbers, rates of pay, hours worked, etc. it's impossible to analyze. All of that detail should be and probably is available to management. Detail on expenses (discounts, etc.) is only disclosed on the annual statement. | ||||||

For reference, the above message is a reply to a message where: About a year ago, the question was asked of three very successful OC restaurant owners. They said the numbers, especially liquor cost, was way out of line. What is your source? |
