Some interesting discussion begins at the 42 minute mark (slide to location) relative to profit/loss of normal food and beverage operations versus catering. Manager Ruppert reported $78,000 profit (as OPA calculates profit) on overall operations during the May through September period. Apparently there was about $250,000 in catering income during the period. OPA says catering produces about 67% profit. However, even figuring only 50% profit on catering, it appears normal food and beverage operations (the bar/restaurant operations) actually lost about $50,000 during the peak months of the season.
Another interesting item in the video is when a committee member said the Yacht Club makes $7000 profit on summer nights when there is entertainment, information purported to come from Pudge Ruppert; Ruppert had left so there was no way to confirm the committee member's anecdotal remark. Tom Olson was at the meeting, but did not dispute the $7000 per night profit number.
It is possible there is $7000 or so more revenue on such evenings, but no one in their right mind should believe the Yacht Club is making $7000 per night profit on normal food and beverage operations on evenings when there is entertainment at the outside bar.
