There are a lot of business who stay open to maintain their customer base and their goal is to break even or better in the off season to do so. I know, I managed one of them.

Though supermarkets and restaurants are different businesses, all businesses share the need for good management to be successful. The goal of satisfying your customers needs aligned with controlling your expenses.

At the time I was managing the average supermarket net margiin was about 3% to 5%. That doesn't allow much wiggle room. Volume can solve a lot of ills, but bad management can lose the profit.
