They call that reality TV, and that's just what our BOD & GM needs when it comes to management of our food and beverage service, some reality! I don't want to beat a dead horse quoting the Faw Casson report of 2003, but that is the only outside professional study of our food & beverage service that I am familar with. If we corrected all of the short coming they pointed out by implimenting and maintaining an internal control disapline, we would be much better off for it. Incdidently, if anyone cares to research that report, be aware that there is the report itself "Internal Control Study" and an 11 page covering letter which is much more revealing in many respects. Just like the present time "internal controls" was a politically sensitive issue. Consequently the report was issued by design in two parts and letter was suppressed. Norm |

For reference, the above message is a reply to a message where: The problem is management keeps saying it needs to get a better handle on cost of sales, but when will that happen? As it now stands we continue to lose more money as sales increase. Previously I had mentioned the TV show Restaurant Impossible where the mission is to save a failing restaurant. Last night I caught a show that does the same thing but goes into a bar with the same intent. It was amazing to see them do a "pour analysis" of drinks served by the group of bartenders. This show uses hidden cameras to evaluate staff. Liquor loss just by a bartender not pouring correctly was substantial but much of the loss was bartenders over pouring drinks to get higher tips or giving free drinks for various reasons with no accountability. The owner was startled to find that one of his bartenders was making more money than he in a night. She career adjusted herself on the spot by walking out. I am not suggesting that happens in OPA world but it did show how important controls are in a business that has a bar. |
