800 degrees is right as long as they use anthracite and not bituminous coal, first leaves very little ash and has almost no smoke, the second, lot of ash and smoke, it's what they use in power plants because it's a lot cheaper than hard coal and there is a lot more of it. | ||||||

For reference, the above message is a reply to a message where: Coal-fired is the original pizza oven. Coal, burning hot, emits little smoke and burns very hot - +800*. Lombardi's pizzeria, on Spring St, in Manhattan is the original coal-fired oven in the USA, still burns lump coal. Pies cook to perfection in 90 seconds; great smoky favor, slightly charred crust...... |
