I am assuming that the Food Truck would be serving something that is unique. Otherwise....why would it be there in the first place? Why would anyone CHOOSE to stand in line on a hot asphalt parking lot?

None of this makes any sense at all to me. If it is an OP Food Truck and they are going to prepare the food, why cook it in an expensive  truck....or cook it in the kitchen and carry it outdoors?

Out on the terrace, diners can be near their table, and go through the line when they decide to do so. I thought the way the tables were set up for family night worked very well. If the line is long, you can stay at your table and enjoy the view and be with your friends until you decide to go up to be served.

Sunday Brunch is upstairs, but the food is served in the same way with a long buffet table.

Seems like Bob Thompson just found out about Food Trucks and wants to "be hip". He doesn't understand how they function in urban areas. 

If we don't watch out...he will have us standing in the parking lot waiting for our Sunday Brunch!

He has lived on the Eastern Shore most of his life and needs to "get out more".
